In case you missed it:
Kristen Kish introduced Chef Helmi Smeuldersย for the week’s quickfire challenge – pair lionfish with gouda cheese. Chef Dan won his first quickfire (which was ironically not in Wisconsin) with his Lionfish Tartare, Orange and Fresno Aguachile, and Gouda Frico.
The elimination challenge required the Cheftestants work as a group to create an eight-course fish tasting-menu. The final four were met by Iron Chef Masaharu Morimoto. After enjoying a tuna pizza course and a sushi course, Masaharu presented the chefs with the list of fresh fish theyโll be working with in the challenge: Atlantic salmon, black bass, black grouper, dorade, monkfish, rainbow trout, red snapper, sea bream and striped bass.
Laura’s Grouper with Guajillo Pepper Glaze, Guajillo-XO Emulsion, and Pineapple Broth left the judges unimpressed as some of the fish is undercooked. Kristenโs fish was nearly raw. Tom thought the fish was baked more than it was roasted, and the mayonnaise was strange texturally.
Kristen told Laura to pack her knives and go … again.
Top Chef Wisconsin wraps up tonight at 9pm on Bravo.ย
