During an appearance on the The Nikki & Brie Show, Katie addressed that “People genuinely think [SAH] is some kind of conspiracy theory.”
Ariana and I have “said so many times, we’ve been at the mercy of these different agencies and people that assign these permits out.”
“In West Hollywood, they don’t operate the same way that Greater Los Angeles does,” continued the Bravo TV personality.
Katie explained the vicious cycle of waiting weeks for inspections, then playing the waiting game all over again to get repairs only to need to need another inspection.
“It can take months in between these inspections.”
It feels like “every single thing could’ve gone wrong or could’ve happened has happened.”
Katie thinks that viewers may be confused as to how long they’ve actually been working on SAH.
“It hasn’t even been a year since we’ve started work on the property,” continued the VPR star.
“We acquired [the space] and took over the lease way before we were prepared or ready to. But, we didn’t wanna let it go” (and have someone else get the property.)
“So, it seems like we’ve been working on this for a lot longer we technically have, but finally we do have all the permits that we need to get the final one.”
“I can see the light at the end of the tunnel. We just had to be patient and roll with the punches.”
Ariana and I want to “make sure that [we’re] doing everything that’s required” in order to avoid fines and do things the right way.
“Contrary to what people think that it is just some grift to sell merch, I encourage you to come to West Hollywood and open up any kind of eating establishment.”
“It is not easy, but we’re so excited. We’re so so excited. It’s gonna be so great.”
