Brooks resides in the basement of the historic Austral House, Collins Street. In this heritage listed building, designed in 1890 by the noted Melbourne architect Nahum Barnet, Brooks pays homage to old world hospitality and style coupled with modern and contemporary produce driven cuisine by Nic Poelaert.

Behind an aged wooden door, which rumour has it was smuggled in from the backwaters of Turkey, Brooks is more than a simple establishment. The dining room is open for lunch Tuesday to Friday from 11:30am and dinner Tuesday to Saturday, however you can grab a bite to eat at the bar throughout any time of the day. It may be a sneaky cocktail or two with a plate of oysters and some caviar or just a quiet afternoon drink.
The bar often is an entity on its own with wine, cocktail and other exciting events throughout the year.
